Fine Dining In The Cave | Valentina Cirasola | Author and Designer

I never thought modern human beings would return to live in caves…. the feeling of letting the earth embrace us is warm, cozy and protective.
The day is grey, but our spirit is sunny. We are making our own music with no musical instruments only with the vibrations of our lips and our simple voices at times much out of tunes.
The place we are going it’s a surprise for the guests in my group, we have not disclose it yet. With happy bellies full of food we are already imagining the next food tasting. So far, in this first week, we have eaten an enormous amount of food and no one has complained yet. How could we? We are walking, going up and down stairs, in and out of places, drinking red wines, all activities that help digesting food easily.

We are arriving at another farmhouse, one of the many we have visited so far. From the exterior it seems very generic, but wait a second and a world of surprises unfolds before our eyes. One of the owners greets us with a large smile and extreme courtesy. He takes us to the coffee area where we will taste a frothy cup of espresso along with local pastries made in loco by the family. He takes pride showing us their unique ways of preparing and serving sweetness. The sweet production of pastries and mignonettes smells like chocolate, sugar, local almonds and honey.

We are in the middle of the Puglia “Murge Hills”, surrounded with oaks and holms, olive trees and aromatic herbs. Today we have decided to walk the paths of taste and refinement inside of ancient restored caves. These caves meet today’s people needs to live in simple luxury, in seclusion and harmony with the earth where pampering is an art. Here the key word is: “take your time”.

The house itself is a historic dwelling dated XVI. The loggia of this rural architecture looks over the rugged panorama of the Murge Hills, the portico, the farm, a church and a well-kept orchard-garden make this farmhouse a unique spot in the world, but it’s how the spaces have been divided that makes it remarkable. Upstairs is an unexpected life of luxury with prestigious furnishing and sophisticated designs, where guests can stay overnight, mingle in the library, or talk business in the large rooms devoted to various celebrations as well.
Downstairs there is a whole new concept of cave living in the ancient peasant civilization transformed in a new story.

The cuisine of this place brings together culture and rural nature.  Attention to details in the “mise en place” is superb. At the end of a day, if you look at the boundless spaces that blend into the horizon and hear a clinking of champagne glasses over the notes of a pianoforte with the singing of crickets at dusk, you will feel that a miracle of love might just happen here, at Luoghi Di Pitti.
