As the time for the next trip to Puglia in Italy is approaching, I am already feeling the warmth in my hand holding a butcher paper filled with that slice of juicy home-made focaccia at Panificio Fiore and relishing the olives, the soft cherry tomatoes, the coarse salt and the crunchy crust perfectly cooked in a brick oven. No where in the world focaccia is done to perfection like at the Panificio Fiore!
The historical “Panificio Fiore” (bread store) is located in the heart of the old city of Bari, generations of the same family has owned it and the recipes are the same as centuries ago. Their specialty other than rustic Pugliese bread and taralli (Italian pretzels) is their heavenly focaccia!
From the outside the store doesn’t have much appeal, its’ not a fancy place at all, but the line outside waiting to get in for that “focaccia” is indicative that the surprise inside will be rewarding. A mixture of nautical theme, as Bari is a mariners-fishermen town, religious icons of Bari, like the patron St. Nicholas who reigns in the store to protect the sale and ancient relics of potteries, columns and architectural artifacts decorate the store. The décor tells the story and the history without rhyme or reason and somehow the atmosphere is very pleasant and inviting. The owners are delightful, friendly, happy people and very generous with tourists and newcomers.
The aroma in the store is amazing and hypnotizing. Once the focaccia hits the mouth it silences everyone, an explosion of flavors happens that makes it impossible to talk. This is simple and heavenly food at this best. Locals go there at all hours of the day to get a slice of that infamous focaccia and walk around on the cobblestone streets of old Bari.
Please don’t miss Panificio Fiore when in Bari !!! Give yourself the pleasure of old style food. If you are thinking of visiting Puglia, I will be there May 27, 2015 living it up until June 5, 2015.
